How we make our chocolate

Casa Kakau chocolate is created using the "bean-to-bar" technology (chocolate made from cocoa beans, not from ready-made cocoa liquor).

Every step is carried out by us - carefully and by hand - to preserve the taste, character, and value of the cocoa.

Here's how a cocoa bean becomes Casa Kakau:

Fruit picking

The journey begins on farms we know personally.

Ripe cocoa pods are hand-picked.

Fermentation and sun drying

The beans are naturally fermented, and then sun-dried.

This process unlocks their true flavor and character.

Direct delivery to Bulgaria

After drying, the cocoa is packaged and sent directly to our factory, without mixing with other sources.

This guarantees a pure origin, traceability, and compliance with EUDR.

Roasting and grinding

In our solar-powered factory, we carefully roast the beans to highlight their natural flavor.

Then, we slowly grind them in stone mills until they become a smooth, aromatic cocoa
mass.

Refinement and aging

The mixture is refined and left to mature.

Tempering, molding, and packaging

The chocolate is tempered with precision, poured into molds, slowly cooled, and hand-packaged.
